One meal a day is not accurate. Basically, a monk can eat until noon. Most monks have breakfast and then lunch. I was a novice monk once. But we had one meal a day. It was enough. Have you ever seen a Buddhist monk's alms bowl? It can hold a lot of foods. Monks can still drink juice in the afternoon after their meal.
