My educated guess is that you aren't being yourself because you are afraid you will get rejected. So you are trying to be someone or something and putting a fake personality to be liked. Fix your issues with therapy or self help would be my advice.

I think you are saying to yourself 'this date has to go well or else I'm no good!' Then you feel shitty if it doesn't go well. The truth is not all dates go perfectly well the way you want it to go. You are not perfect and also remember a date is a two way thing. Your worth doesn't depend on success w/girls and dates, your worth depends on being human. So you are worthwhile whether your goes well or badly w/ girls.

See how so called 'naturals' don't need game. They don't need to micromanage interactions. Fix self esteem and everything falls into place. But seduction has some theories and value which can improve your success with women so its not total bullshit.

Probably not good to do it at a university as its a business afterall, people over there have power over you and word will most likely get around fast hampering your life there. But on the 'creepy' thing, fuck that. No matter what 'creepy' cannot be avoided as its all subjective. You can be a smooth ass motherfucker but someone may still find you creepy. Say anything you want as long as its coming from you.

Its more of a mindset rather than overt behaviours. Texting her too much, apologizing too much etc manifest themselves through needy attitudes. So the solution would be fix your mindset. 'I want her approval but I don't need it' should be attitude to show lack of neediness.

Communication might be key here.. Not in an arrogant way but assertive way. Something like 'hey I've been confused lately when you invite me and cancel at the last minute. Did I do something wrong?' This will ellicit something without blaming her which can make her defensive. Even after things don't workout, time to move on as she might have some emotional attachment issues.

If doing for enjoyment in moderation, fine. But if you are using these as a means of avoidance from fear and outside world then you gotta focus on getting your mindset fixed. Read books by Albert Ellis on REBT and other cognitive therapy books.

This is truly a great post. Challenging negative self talk is actually at the core of cognitive therapy and approaching is behavioural therapy. This is legit the best self development one can start with.
