So instead of asking her to do something on a specific date, ask if she wants to meet up again and then make her propose the date. Maybe she has actually been busy the other times. If you want some peace of mind and maybe open up the possibility of a 2nd date abut more, just ask her what's up in a gentle, non-condemning and not needy way.
