Grilled salmon with crazy hot Cajun spices; sushi rice (in the rice cooker on a timer); overcooked carrots (intentionally, in the slow cooker on high all day); kimchi from a jar. It takes about 20 minutes of active cooking after the prep of setting it up before coming in to work. Even then, it's mostly heating the grill and just making sure stuff doesn't burn.

I was once on a flight from New York City to Tokyo, and the plane had to turn around when we were halfway there -- over the Aleutian Islands! -- because a volcano erupted and was spewing ash in the air which could cause the plane's engines to die out. A lot of my family are human train wrecks, and I've worked hard to not be that. Within myself, I've got that going for me. I am working with a therapist on my anxiety issues. A lot of the anxiety is side effects from cancer meds, but perhaps subconsciously it was from living with a husband who was lying to be about so many things. We will have many things to discuss at this week's session. Thank you for the comment, and the kind words.

My husband and I have a dog! His name is Rusty Shackleford and he's a Rhodesian Ridgeback. We also have 6 cats. All are rescues. I used to work in the Biophysics Department at an an Ivy League, and it was interesting as a non-scientist interacting with those that were. I knew of no one from that job that was into any sort of politics. Aww, that's sweet! My husband loves to hear stuff like this, so every so often I do the same thing. I also like to email him with a running list of things I love about him. My love language is service and gifts, but his is verbal and physical, so I have to remind myself a lot to do the stuff HE likes.
