Read from body language, facial expression. I don't usually use cold reading off the bat, I use it after sometime into interation so i have enough data to make an educated guess. Sometimes I made a total bad guess, they'll argue/defend themselves from my misguess, then i get to find out more about them, so it's a positive spin either i made a good read or bad read.

My experience is, always in person. Text doesn't convey the tone well and is easily misunderstood. like mentioned, flirt and test your water when you two are having a good time.
