One argument I noticed he did not put forward on why Jews originally adopted the practice was to mark Jews. I was raised Jewish, and this was an argument put forward by my mother and my rabbi both for many uniquely Jewish practices, such as dietary laws and fasting days and so forth. The idea is to "mark" your people (literally and figuratively) as different, to encourage group solidarity and discourage any mixing or marriage outside the group, and emphasize that you are a member of a special (chosen by God himself) people. Now, why they chose the penis? Test of faith? Hell if I know.
