What exactly do you want from her? To date or just smash?
She can say that she doesn't date coworkers but she won't be able to ignore the connection if it's legit and happens to be with a coworker. Things might naturally progress if you continue hanging out and that connection remains.
Whether you want to listen to her or not is up to you, but as with anything, this could either work out to be great, or it'll crash and burn.

Then I'd suggest to not think about it so much and let whatever happens happen. Do what you feel, because I'm certain that she's going to do the same.
Best case scenario is that everything is perfect and y'all get married and start a family with the house and white picket fence. Worst case scenario is that everything turns to shit and creates problems at your job.
It doesn't really matter much what the girl is saying, you should pay more attention to emotions and non verbal language.
