I need to echo a few things already said, as well as say a few of my own. Absolutely don't give her your number, if anything, get hers.

If you are asking how to get her number, it's really easy. Give her your phone and tell her to put her number in there. If I'm in a conversation with a woman who I plan on following up later by phone, I'll pull out my phone mid conversation and hand it to her. I won't break away from what I'm saying, I won't look awkward at all, I'll just glance down at my phone, unlock it, put it on the enter phone number screen, and hand it to her. She'll take it while the conversation is going on and a)immediately put in her number or b) wait until the story is over and say "why are you giving me this?" If she asks tell her you need to be able to get in contact with her later so you can hang out. You're not asking for a date, you're not giving her any reason not to give you her number, so she will, almost guaranteed. The prob with this is that you lose the connection, emotion and energy that you have in person, so as someone else already said, your best bet is to forget about the phone and tell her you'll meet up with her after work. Don't worry if she's being nice because it's her job, if she has a bf or anything like that. If she's attracted to you, you can progress. I have a hard rule that I use personally and that's if there's a ring on her finger, she's off limits. Some guy out there made a commitment with her and I'm not going to screw him. No ring, no commitment, fair game. Lastly, don't worry about her. You barely know this girl so you obviously don't have strong feelings for her. If it works out, it works out. If it doesn't, there are a lot more women out there. Getting outcome dependent because you have one-itis on a girl you barely know will ruin you.

First of all don't give her your number, she will not call you.

Now why do you want to talk on the phone to her so badly? The phone is a consolation prize in that moment. Why don't you just ask her when she gets off (or lead her into mentioning it without you asking - then you know shes interested) and go from there?

Also keep in mind she is a waitress so she might just be being nice as part of her job.

Say you know the place where all the waitress go after hours to have a really fucking awesome time. (she can go if you let her.) It's a secret location though. If she wants your number she'll ask for it then. If not go creep on some other 20 year old, beta.
