For starters, don't mention that you used to work under the table.

Dress well, speak clearly, show interest in the company (do some homework) and come with some questions prepared.

Don't show up tired or stupid.

The manager is just trying to feel out how difficult it's going to be to train you and then stand next to you for 6 hours every day.

Give the manager a firm handshake, have good eye contact and use your previous experiences to answer interview questions. Any time they ask you something regarding a task on the job, tell them explicitly how you would handle it. Be confident in who you are but don't be arrogant about the industry if you're new.
