I think that's because there's no pressure involved with that. I don't wanna mess this up so in person it's a bit more difficult for me

Right, you are putting pressure on yourself. So stop, just forget about you forget the idea of asking her out. Start by saying hello and get into a friendly conversation.

I'll give it a shot but then where do I take it from there. Do I ask for her number or wait for some more encounters and then do that? I'm really bad at this stuff

Start reading some of the basics over in the sidebar on the right. Just ask her out when you feel like asking her out. But don't wait around for multiple encounters, or she'll think of you as a friend more than a date. Be up front.
