Don't sweat it. She texted you so that you have her number. She is interested to degree, otherwise she would not have texted you.
Stop asking her about her fucking day (like you really care lol). You want to meet her so verbalize it.
Just text her and tell her let's meet for coffee. And ask her out.
I have made the same mistake many times by trying chat using text. It's a black hole.. Get her out..

Simple and sweet. She might say yes.
She might say she is not free. Then ask her schedule and setup a date when both of you are free.

Well yesterday i tried suggesting coffee in the next couple days, and she said she'd love that - and that she is about to have a lot of free time since she just turned in her 2 weeks. But when I asked her what a good time would be she didn't reply. At this point I figure I just call it quits unless I hear from her again but do you have any input?

If she has already told you she has free time, then don't ask. Just tell her. I might write something like this "Hey X, let's celebrate you quitting your job. Coffee is too boring. Lets have ice cream on Wednesday"..

Ah she replied today apologizing that she's a bad texter and is free whenever. I answered but looks like she'll be another day haha I guess she's just one of those
Good stuff. Most people are bad texters. That's why I like to cut the bulshit and get to the date ASAP lol.
