Look for signs that exist in objective reality and don't require interpretation. Things that are 90% positive or 90% negative, that's a good way to know because those things aren't in your head and will tell you what you need to know.

My issue is I can't tell if I'm just interpreting this as attraction from my end because that's what I want to see or if she feels it too.

The only way to know is to physically escalate and be paying close attention to her responses as you do so.

In general, the answers you want can only come from observation of her responses to you, your actions, or words.

When i compare how I interact with my other female co-workers I don't feel this at all and I don't have any desire to make intense eye contact when talking to them, but with her it just makes my heart race and sooo turned on.

You're only talking about your own response here. This does not tell you about her.
