Option 1. Although she is says she is busy this week she is open to make plans for next week. If she was not into you she would not have said next week and left it open. She could very well be legitimately busy this week, and you just met up for coffee, she does not owe you any time that would cause her plans to be derailed. Her wanting to do next week is a good thing. Call her over the weekend, ask her about her week, and attempt to set something up
