Dude, shes cheating. Hire a PI if you must, call cheaters or what ever. Do your own PI work.
Believe in the truth of her lies and her actions. She is lying to you, repeatedly and changing her story, which means multiple lies. She is super secretive and she is flopping at hotels and lying about it.
She is cheating, probably with the boss. They likely hit it off in her interview and have been pursuing a secret relationship the whole time. And she likely holds you responsible.
Get a lawyer, get your finances straight, drain the bank accounts, keep your kids. She is ready to check out.
Tell her that her actions show you that she should take some time away form you and the kids, a temporary separation based on what looks like her cheating. Don't expect the truth from her at any point until she hits rock bottom. When the truth comes out she will be resentful as hell, then sorry. She will be resentful not for her actions but because you didn't just go along, you had to ruin it with the truth.
Don't support her financially during this time of separation, you have kids to think about. Make sure she is cut off from any of your monies and joint monies and joint credit cards or she will stick you with a ton of debt for her vacation away from you and the kids.
Get your case together to divorce her, keep the kids, keep the house and so on. As long as you are the primary care giver she can't force you to sell the house.
Also start keeping a private or secret diary of everything that is happening, take pictures, screen shots, keep receipts and record all conversation on the phone and in person, this will be very very important later. Track her nights not coming home, her excuses. Look into her boss, find out if he is married or not.
And request a copy of all the texts on her phone from the phone company. They will usually give you up to three months worth for free.
Then confront her about her cheating while she is enjoying the separation.
And be prepared for a story about her boss forcing her to have a sexual relationship in order to keep her job, which she did, for you and the kids. Don't be a simp cuck bro, it's gonna hurt like a mofo, but you gotta stay calm, stay in control, see the game that is unfolding in front you, stay three steps ahead mentally. Do it for your kids and yourself. They and you are your future and all that matters. They are depending on you.

I'd start preparing for a divorce. It's coming and you can't stop it.
Start documenting any "misbehavior" with her and keep evidence in a save location. Talk to a financial advisor get advice how to financially prepare yourself for a divorce. Start researching divorce attorneys.
Find some local hotels that you can check into at any time of the day or night. Think of it this way, if your were kicked out of your home 2 minutes from now, how would you find a place to stay, have money, change to fresh clothes, etc. May as well pack a ditch-bag (bug-out bag) with everything you'll need. You only have 30 seconds to grab everything you'll need until you can hire a lawyer to get access to your home to get your personal belongings. Make sure you have access to money that she can't drain the money from.
Start spending as much time with your kids as you can. You'll miss them as soon as the divorce starts and your time and access to them will be very limited. Same with pets.
Find a why to secure your personal property like childhood photos, the first tool your dad ever gave you, your grandma's quilt.
I was in a similar situation. I did some of these. I with I had done all of them.
