Because melanin-richness is the default condition of our skin. White people had their melanin reduced to save energy and adapt to climate over millions of years, while it remained in the rest of the population (Just like how Asians had reduced height to more easily navigate the rough hilly terrain). And white is a recessive trait, so any interracial pairing would show the colour.
