75 kg is fucking skinny for your height.
You can't squat more probably because your technique is shit - ask to be checked by a trainer.
Protein shake daily is nothing. You need 2 g of protein per kg (your diet included - calculate).
You can stick to your routine until you stop seeing progress - then switch to another. Everybody is somewhat unique and yo uhavbe to try new thing to know what works for you.
Not sure about your looks approach. To me monk mode is more about discipline (which includes taking proper care of yourself) than being an IDGAF bum.

In order to bulk, you need almost half your body weight number in grams of protein. Consuming carbs are necessary as much as fats and vitamins and nutrients, because what you eat can't get absorbed into your body without a balanced diet. You also need to plan when you eat these foods throughout the day. The conventional standard of small breakfast/lunch and large dinner needs to change.
And if your squats peaked out at 3 sets of 5 reps of 70 kg, you need to change your technique up. 3x5 is not really doing anything either. Try smaller weights, slower returns, and faster sends. And use 5x5 or the good old 1x6-1x8-1x10. And work the weight up. Remember, the idea behind bulking is to rip tissue. If it isn't burning, you aren't doing it right. There is also a difference between burning and hurting.
