When men say "not all men" it is usually because they feel the need to defend themselves from guilt.
But why do they feel the need to do so? The answer is because they are being held accountable for things they did not do.
I will be the first to say that some men are trash. There are many men who are rapists and assholes. Women and feminists are, somewhat understandably, angered by this, but a few of them of then go completely overboard by unreasonably responding to this with things like "all men are rapists" and "kill all men."
This results in men feeling like they are under attack, as they are being unfairly held responsible for things that are of no fault of their own. Therefore, it makes sense that they would respond to this with "not all men."
Men too sometimes go overboard and feel the need to say this where context does not permit (i.e. when a women is describing a specific bad experience) but this is only a fraction of the contexts where this is said.
It is entirely possible for women who have had bad experiences with men to discuss them without saying absolutely horrible things about all men. And there is no reason whatsoever why they should say those things, as they do not help at all, but only increase the tension between men and women.
If they didn't say these things in the first place, men would not feel the need to say "not all men."

What's worse is that when there are clear cut examples of women doing terrible things (Raping children, being abusive, etc) then feminists will quite happily and hypocritically roll out "Not all Women!" and think that's fine.. but the moment a man say's "Not all Men" he's suddenly defending the actions of the horrible men..
It's double standard bullshit.
I could put together an article showing that women are the majority when it comes to embezzling money from Schools, Charities and even work places.. but i'm pretty sure many women would get highly offended if we generalized all women as potential thieves based on the fact that the majority of people stealing money are indeed women..
Now that doesn't mean that Men DON'T also embezzle money but it is something that women have a majority on..
Maybe instead of teaching businesses "Don't get your money stolen" we should be teaching girls /women "Don't steal money!"
The idea above is a tongue in cheek parody of what many feminists have said: "Instead of teach women don't get raped how about we teach boys / men Don't Rape!"
Finally, you also have the double standard where Feminists claim that they want men onboard with their movement and to be their allies.. well i'm not sure where they learnt their tactics because you don't win allies by alienating them to your cause by implying that ALL men are rapists, scum, pedophiles, assholes etc.
When you come in heavy like that as well you aren't going to change men's minds because you already have them defensive because they feel like you are personally attacking them for shit they never did or would ever do.
But hey look at me "Mansplain" how feminists get shit wrong.. Now, if you excuse me I have to go Manspread myself across the couch and Manterrupt every woman I see in public so that I can check my Toxic Masculine Privilege!

It's a time honoured behaviour on the part of women to shame men into action. The white feather is the primary example of this in play.
The white feather should never be forgotten or forgiven.

A better phrasing...
If you want us to stop saying Not All Men then stop blaming All Men.

people who critisize the use of not all men are some of the stupidest people in the world
not only are you stereotyping half of the worlds population, you are encouraging men to agree with the stereotype you are assigning them
the worst part of it is that all men are trying to do when we say that is separate ourselves from some of the worst people on the planet, actual rapists. why the fuck would anyone be forced or coerced into identifing as a a rapist when they are not.
We all love reversed role examples so here are a few
"not all women are gold diggers"...... "by saying that you are part of the problem, all women are gold diggers and you have to admit it!"
"not all black people are thiefs and murderers"........ "by saying that you are part of the problem, all black people are thiefs and murderers"

Double standards exist on both genders. Not all men or women arguement is subjective variable or extreme when someone is posing their arguement . Data facts and statics is how know if something is fact or not. We have to do our research to make sure we are correct in what we say. Gentlemen their no point trying to communicate with the feminists. Feminist use sign language Shame insults guilt and the need to be right to avoid personal responsibility and accountability for their choices and behaviour.
