It's not Disney, it's a bad trope among all types of movies. Single parent means one less cast member, rocky relationship with child, automatic backstory for audience, 50% less adult around to monitor the child so they can get into any shenanigans that the movie doesn't have to explain, if the parent is dating - more friction with child, separation or divorce could also explain why single parent just moved to a new city (another trope in itself), kid alienated by new surroundings and at home, etc. In some circumstances, fighting parents threatening divorce also form a similar backdrop for a child main character.
It's literally in every other movie. Especially FOR children. Normalized very much through the 80s.
ET, Casper, Toy Story, Child's Play (old and new), the new Ghostbusters 2020, Man of the House, every Tim Allen comedy...you'll notice it everywhere.

In the original, Jasmine and Aladdin couldn’t be together because of social class differences, resolved when the Sultan said, ‘lol fuckit.’ If Jasmine’s in charge, she could do that any time she wants. I don't think Aladdin is an original Disney character. He's from the Arabian Night stories and someone once told me that in the original story Aladdin rapes Jasmine. So the story's been changed before.
