I don't know if you posted this in the wrong sub, but anyway: I avoid the cardboard taste by making the oats with milk. No water at all.

Using water to cook helps prevent burning, and then add milk afterwards. This is especially useful if you don't feel like stirring all the time or not using teflon, like a stainless steel saucepan.

Alton Brown has 2 highly rated Oatmeal recipes that I've been meaning to try. They both sound excellent and AB is the Most Interesting Man in the World.

generally stainless steel is used for food processing and manufacturing as it isn't additive or corrosive to most stuff it comes in contact with. It generally will not break off into food (like plastic or ceramic could) and if they wanted to they could metal detect the oats after they are cut to avoid any steel particulate getting into a consumer product. Steel is cheap relative to other metals that they could use so it hits all the right criteria.
