Actually, we know how the Greeks discovered it. Eratosthenes proved Earth's surface was curved and even measured its circumference with a staggering degree of accuracy!

On top of that, it was noticed that when a ship sails out of port, the top of the mast continues to be visible after the hull has disappeared. It was quite obvious to anyone who traveled by sea.

Not sure if it relates to theorizing a round earth, but shadows were used to by ancients to calculate the circumference of the earth.

I forget who, but someone placed a rind on the ground in Greece at noon on a certain day and measured the length of the shadow compared to the height of the rod.

A year later, to the day, that person placed a rod on the ground at noon in Siwa and measured the shadow. This allowed them to calculate how many degrees south Siwa was from Greece and attributing the distance to that many degrees were able to calculate the circumference of the earth.

It stand to reason that if they can use shadows to calculate the earth's circumference, those same shadows may have indicated the earth was not flat.
