When interacting with customers or clients like this you take most on the chin. You have to talk them down save company face and kill them with kindness. You arent just representing yourself at work but your company.

Ok, let's go through why you were nervous. You were nervous because he was yelling at you. Loud noises instinctively alert you and put you on edge in case you think he's hostile. Fight or flight: it's a natural response. That's why you feel weak, because you're on edge and he makes you feel helpless like prey. You subconsciously give people that power.

No one has power over you unless you give it to them.

Best way to deal with it is to simply not give a fuck.

you'd be surprised at how well you appeared to have acted in that situation. That's a natural response. I've had times where I've felt nervous when being confronted or fucked with and people around me wondered how the hell I was so calm.

Hey! I've been dealing with the angry customers for years, and I've learned a few things.

Know where you stand with your company. Know how much shit you're allowed to give back before losing your job. That way, you wont be nervous with whatever steps you take to diffuse the situation.

Situations are best diffused with humor. Make yourself laugh and your customer. In your instance I would've heard the customers complaint and been like "I know, right!? What bullshit? What are they doin? Butchering the whole damn cow for the burger? Letting the dough rise for the buns? I wouldn't pay for this if I were you either." And then follow policy & procedure.

The more times you succeed with that, the more confident you will become. Just make sure whatever joke you make agrees and furthers the complaint/point of the customer.

Im so stoic that is offends people. I missed a reaction they were expecting or they interpret my state as angry. Being stoic couldnt be further from my natural state. Its not something that will ever be natural or come easy for me.

Its like being allergic to peanuts and continually eating peanuts so your body just toughens up. It doesn't work that way. And those who claim they were fragile and overcame it by just talking to people (omg much wow to you) were severely exaggerating their mental state. Simple advice = easy life.
