I would say: "Thank you for the invite. I am very flattered, but I have a policy of not dating coworkers."

Sometimes a straight answer is best.

If she questions it, just say you were once in an office situation and it got uncomfortable.

She only asked you for drinks. She didn't say anything about dating you or liking you. You can't assume that she is hitting on you (even though it's likely). NEVER ASSUME.

Personally if it were me, I would just take her up on it. Just keep it friendly. If she tries to hit on me, I would politely decline.

But obviously you want to avoid this situation altogether. So your excuse of "Sorry I'm busy with other activities/hanging out with friends" is good.

You could just reject straight up. By saying you have alot of work to do. Or you could say you have a girlfriend . If you are sure about your policy of not shitting where you eat. You could tell her straight up what you stand by.

You can still use the "I don't do X with coworkers" excuse even if you think she might play it off as friends--"I don't go out one on one with female coworkers because it gets too many people talking" or similar. The impression you want to give is that you don't even want to appear to be dating coworkers, much less actually date them.

Respond tomorrow with "that would be cool!", then ghost. If she confronts you in person, you've just been so busy you haven't had the time to get back to her.

Go out with her for drinks, but make yourself unattractive on purpose. Whine about your feelings. Ignore all IOIs. Be her "friend". Fake gayness or gay traits. If your goal is to be unavailable at work, project the type of demeanor you wish to be perceived as having.

Or hit on other girls there. Have her wingwoman for you either with her consent or with her oblivious. Use her attraction for you to elevate your SMV.

Lots of ways to play this that don't make work a hassle.
