As much as you're feeling self-conscious/hurt about the relationship conversation you had you need to play it cool. She knows where you are at and how you feel. You've said your part. If she does truly need time to process this you will know in time.
If she is still dancing around making plans or seems uninterested perhaps she was alarmed by the relationship talk you guys had and is unsure of how to proceed.
The best card you can play right now is indifference.

Unfortunately, the situation seems pretty clear. She is acting scared at the mention of a relationship. I'm sorry that you feel attached to this girl, but there are specific ways to go about your dating life that prevent these situations. For now, you will have to go through this punch in the stomach and for that I'm sorry, but you really don't have to end up in a situation like this ever again.
How do you do that? Don't invest all of your eggs into one basket. The community has repeated this over and over. How do you apply it?
You can have "the talk" a lot earlier. Even on the first date, you can ask a girl what she's looking for. If you're confident and honest and have an answer ready that makes you look awesome (the specifics differ from person to person) then you're ready to ask the question.
Never stop scheduling dates with other girls until you're in a committed relationship that's already been negotiated out already. Imagine if companies interviewed 1 candidate per month. They'd feel rejected as hell when the candidate rejects them at the end of the month and they're left waiting for their next option.
