you're overthinking it. What I would do is ask about trips or other stories she might have. What you want to do is actually try and imagine you are her and you're trying to visualize exactly what she is saying. You then want to ask for details that would allow you to paint a clearer picture of what she is saying.

Be an active listener(dont think about what to tell next when she is talking, just think about what she is saying and talk about that and develop it),
Dont overcompliment (one compliment during date is fine - pick something interesting on her that can be talked about),
If things go well, tell her some small secret and ask for one in return (nothing crazy, like - I have a secret, you wanna know it? sometimes I sneak in middle of the night to eat ice cream, I feel realy guilty about it but I cant help it)

I would involve more mobility, it gives more opportunities for kino and escalation. After drinks and food I would walk to a different venue. This way you can put your arm around her, lead her to the new venue, etc. and also have more privacy.
There is also the idea that if you take a girl to many different locations she feels as if she knows you better and is more comfortable with you.
