IMO, wait a week, shoot her one more text and say "hey wanna grab lunch/drink/coffee/etc. on (Time and day)" then leave it at that. if still ignored, delete number, if not, then she texted you.

Maybe casually chat her up in class, and before leaving the conversation let her know you tried texting her and don't make it a big deal.

Unfortunately, we’re not in the same class anymore. That was about a year ago. Never thought I’d see her again though so it definitely made my day!
