But your question seems vaguely general, and in need of a general response, so I will declare it on-topic for seddit.

It is possible you are more confident via video chat etc. because there is no direct interaction, you're not going to get seduced that particular moment. It shows potential but has no real risk. But going away for a weekend is forcing you to decide in advance how deeply you want to connect with this guy, and it appears you have decided that you want a sexual relationship. That is kind of the point of a weekend getaway.

So consider that the guy is also aware of this. He is also expecting a sexual relationship to be initiated during this weekend. You need to help each other get over the awkwardness of any one moment, be able to let it go when things don't go the way you envisioned. You can't hit a hole in one your first time at bat. The best way to become less shy in a specific situation is to work on being less shy in every situation. Force yourself to stop sitting in corners and keeping to yourself. Go talk to people so you get used to it.
