Telling girls you like them never works.
Also you are lying to yourself if you think you won't care if you get rejected. Your oneitis will get worse if you get rejected.
The best advice is to play it cool and escalate normally like you were gaming any other girl. however, you're probably too deep in the Friendzone already and you also sound too crazy deep in your oneitis to take good advice.

You're right, I have a shitty case of oneitis. Clearly I'm doing something wrong or I wouldn't do be in this situation

I would say don't come on too strong. It's good to make your point, but if she does like you and you're acting weird, she might worry that she's bothering you somehow. If she doesn't feel the same and wants to be friends (I know, I know. That word) then too much will make her feel awkward around you.

It's a pickle. I'm already acting weird, so I'm gonna try and take a week or so off, spend time with friends / go on a date and rebuild myself.
Then I'll ask her to happy hour next weekend and try and escalate normally

I was thinking about that. Honestly, don't worry so much about any kind of break, I think. Instead, leave it up to her. That way you aren't always the eager one and the initiator.

Ideally you'd just move on... but if you really want to try something, maybe ask her to Netflix and Chill, and massage the back of her head/neck through her hair with the tips of your fingers, if she's anything into you, whenever you turn to her she'll read it as a kiss attempt and may simply do the same and meet you half-way. And if that happens, don't fucking talk about anything, don't make it awkward, don't make it about tomorrow, make it about then and now, and just go with the moment without a thought.
