Compliments are usually easy, try something she might not usually hear (ex. "I like the color of your nails", "your hair looks good did you do it yourself", "that's a nice [piece of jewelry], [neg]")

Open ended questions about your surroundings/ situation (ex. "How long are you in town for?", "are you staying at this hotel?", "how much money do I have to loose before I hit the jackpot?", "I want to go see [insert live performance here], have you seen it?") literally almost any question will open up the door to a conversation if she's feeling it. That last one can easily even lead to a potential date.
