Being a vegan won't stop you from getting "ripped." Getting to low bodyfat would be dependent on a constant calorie deficit that you recalculate as your weight drops and your maintenance level of calories drops accordingly with it. If you were putting on size though, I would advise against being vegan as I feel it would make it very difficult to hit the correct protein carbs and fat macros to put lean mass on.
