Businessowners should have a foot switch to lock the doors to their entrances (like bank tellers have to trigger an alarms). If they have suspicions about a customer, and it look like they're about to dash, trigger it to lock the doors. If they do pay, trigger again to unlock the doors. An easy invention.

My friend in eighth grade used a bicycle lock to lock the double doors in the front of a restaurant.
All of the customers who wanted to leave had to walk through the kitchen and exit via a back door.
The fire department arrived several minutes later and cut the lock.

Why?
Safety.
Most businesses probably figure it's not worth the criminal charges, bad publicity and loss of permits, if it were discovered they had installed and used such a thing. Pretending it was a convenient accident isn't really a clever ruse.
Hell, just having a door that "accidentally" locks people in during business hours is going to be an offense, if you can't show you've taken steps to get it fixed.

Actually I think convienice stores should go one step further. Have a short entry way with doors at either end. And the main door at the center. When robbed as the thief exits to flee, the clerk triggers the foot button, it locks all 3 doors. The thief is then trapped, waiting for the police.

So, completely shut down an entrance to a store because of one person? That's just dumb. Not to mention that having a clerk solely to trigger that is a dumb idea, there's often not people whose sole responsibility is to watch the doors anyway and stealing from convenience is not that dramatic.

After you've been robbed, you're waiting for the cops anyway. The case I'm talking about is armed robbery, not people stealing stuff and running out, who you might not even see.

I had a job in one, years ago and I've seen news stories of the thieves being shot, trying to flee.

Only a garbage human being would shoot someone robbing a convenience store. The solution to that is to not staff your store with garbage people, not to lock the thief in there with them.

They can't because they are trapped inside the foyer.
Picture a breezeway entirely enclosed, it can even be all safety glass, which you want so its unbreakable. Its a rectangular shaped looking down at it, with 3 sets of doors. 2 are at each end of the rectangle (the short widths of the rectangle). One of the long sides of the rectangle faces the parking lot. The other is connected to the store, and in the middle are the actual doors leading to inside the store. So, the thief robs the place, enters the breezeway to flee. Before he can get to either of exit doors, which are either left or right as he exits the main entrance. The clerk triggers the locks, locking both sets of doors, as well as the main entrance doors. So the crook can't open the exit doors, and he can't go back inside to beat up the clerk. He's trapped, till the police come

Gotta be careful some may call this forcible confinement/kidnapping. Most of time you could get away with this but you don't take the law into your hands, get clear photos, follow them to the vehicle and get the license plates and vin if you can and call the police. All you can/should do.

Depends where you're from. If someone tries to steal from you in some places you could kill them to protect your property, other places you can citizens arrest them and other places you can't do anything and you need to let the police do it.
