If we're talking about here and now? Nothing, unfortunately the only thing you can do really in this situation is observe and wait. If she does end up accusing him of sexual assault he'll be grateful for you stepping in assuming he isn't a massive idiot.

I say this being a single guy, some men are just that desperate for a girl's attention they'll put up with anything and it's not healthy.

Well, normally the guy should document all the weird stuff she does to be ready when she will accuse him. I guess you could do that, but might be a bit hard as a third party.

I honestly think he just doesn't believe it happened. He would have to be insane to knowingly date someone who accuses people of assault.
