It's a bit pathological of her to pick at your insecurities. She knows what she's doing, and yes, playing her at her own game will probably work.
But is playing games and being manipulative "you"? Be careful of becoming a person you don't like just to keep someone else invested. People who enjoy that kind of shit tend to be chronically bored, so it will ever stop.

I'm just getting the energy from her lately that she's too secure about us.
Like she assumes I'll put up with anything. Or that she feels that I'll always be there when she texts or calls.
She used to get jealous every week about something stupid and get a little hysterical until I calmed her down. Now it seems like she assumes I'm more interested in her than she is of me, and I feel that she assumes I'm 100% not interested in other women (or maybe unable to get many women if I wanted to).
The result is she shit tests me now, and acts less sweet. It used to be like "Oh I miss you so much baby. You're so handsome!" on the phone. Now it's less of that stuff.
It's nice that she no longer gets super jealous, because it was stressful and she's my girlfriend now. But I feel like she's too familiar with me to the point where she's losing respect and attraction.
I figure if I start going out more alone, and text her less and create some uncertainty, that she will appreciate me like she used to.
I'm often away from her because of work, so we're long-distance every now and then. And I got in the habit of having video calls with her every single night while I'm away. That was a mistake, because it makes her too familiar with me.

Maybe, but she knows I'm self conscious about my body, or at least suspects it. I've been feeling like I'm actually in good shape lately, I workout a lot. Maybe it's her way of toning down my sudden confidence.
I'm more annoyed by her acting less sweet lately. Saying less sweet things. Being late. No longer acting jealous. This stuff makes me feel like it's the start of her losing interest or getting bored.

3 weeks. for now we have video calls and video "sex". I don't text much, only like 2 simple texts per day.

I thought of this the other day. I checked the message/call history and found that I'm initiating a lot more than her, like 2/3 of the time the past month.
When I was letting her initiate most of the time (or even HALF the time) she started arguments and told me that I don't initiate enough and that she needs me to do it more. It really got under her skin. But the truth is, it was like 50/50 initiating. She's just insecure. I never knew how to deal with this, so I just initiated more.
Also, when I would end the phone conversations first she would also get insecure and ask me what's up and wonder why I want to end the call. So now I just let her end a lot of the phone conversations first.
It's annoying because if I initiate less, to like 1/2 of the time, she will start getting insecure again real fast and start an argument about it while acting like she initiates all the time. She's a hypocrite lol. And a latina, if that makes a difference.

I think a good rule with women is when in doubt pull back a little
Another option would be to just tell her you don't appreciate her bullshit. But before you do I would ask yourself "If this person doesn't change am I still happy with her. And if they answer is no, am I willing to walk away".
