You can make conversation with anyone. And "feels good." And sorry to be realistic. But you're essentially just entertaining them. And most people won't turn away from free humor
"Oh yes, talk to me. Captivate my interest!"
But if you're trying to ask me out... GET LOST. Youre not worth my time.. makes you wonder that you shouldn't be talking to them in the first place

When the boyfriend comment got casually dropped in there I shifted gears some bit. Moved my perception of the conversation more to okay just have a nice connection for the day.
Guess a good question might be, what the best approach is to better understand the conversation intentions for both people before spending energy on it. Not so sure there is though except for actually talking.

Next time ask her why she likes her boyfriend and why she thinks they are good together. Then, tell her you're happy for her she found a man.
Then move on and flirt with her or whatever.
All if fair in love and war and the reality is that if you are assertive, confident and straight forward, her boyfriend is slacking in one or all of those areas.
