Why are a lot of the women i find attractive not very attentive to other men and don't get hit on often?

Not sure if this is right but I’ve heard that the people you are attracted to have a lot to do with the people you are exposed to. I guess this would make sense in your case, if you watch a lot of anime, you are exposed to those types of girls a lot, hence you may feel more attracted to the features that resemble the girls in the anime you watch. Within society and media, the conventional beauty standard is heavily pushed to the forefront, which causes those conventional aspects like long blonde hair, sharp jaw, small nose etc to be highly exposed to the majority of people as the epitome of ‘beautiful’ and ‘sexy’. So a lot of people identify that they feel attracted to those types of features.

Anyway, I think it’s great that your attraction differ from the ‘norm’. Conventional beauty standards suck, and it’s nice to think that all kinds of people can be viewed as attractive to others as they are.

you should be celebrating that you got less competition for the hot girls. Attractive is subjective.
