Two things:

You might be approaching girls that you simply aren't actually interested in, you just want to see if you can convince them to have sex. Once that is apparent, there is nothing more you want. The fix for this is to start screening women so you only escalate with ones you are interested in.
You are scared of success and have either sexual anxiety or simply are afraid of it not going well for other reasons. Fix for this is to simply force yourself to follow through, even if you have lost interest.

Probably a deep-seeded fear of failure. You want the validation of knowing you can get women if you want to, but lack the self-confidence to take it a step further and get the job done. Maybe you're afraid of not living up to the image you've created? Maybe you're afraid of the reputation you'll get? Maybe you're just worried that sex will lead to an intimacy level you're not able to control, so it places you in a terrifying position?

Either way, you should probably just cowboy the fuck up and do it already.

I am in the same situation. As soon as a girl wants to fuck me I subconsciously lose interest. My scumbag brain..
