Uh...just create a story about the thing you want to do with her. Have it relate to her ("this reminded me of you"), be kind of descriptive, make her want to experience it. Ask if she's feeling adventurous (she's on vacation, should be a yes), ask what she's doing over the week. Pick a day that works for both of you (in your head) and tell her that you're going to do that thing you told her that story about and invite her along on that day that you decided works.

Or you can just...not do it. You're saying "as friends" but are you sure you don't have ulterior motives?
