Hank Moody is a Gary Stu but he does demonstrate good qualities to emulate like extreme non-neediness, adaptability/playfulness, and outcome independence. IRL Hank Moody would be far less successful in life, far less sympathetic, and in jail.
The girls in Californication are Hollywood girls, meaning that they're used to trading on their sexuality, and tend to be high-novelty seeking Type A personalities. They're not representative of normal women, even the girls who are not Hollywood actresses/wannabes/hangers-on. Hank's style of game is perfectly tuned to this type of girl. All he has to do is act unimpressed, non-needy and slightly horny and the girls chase him.
One of the things that makes Hank catnip to women is that he's both deeply romantic and romantically unavailable. All the girls naturally want to be his replacement Karen (oh the irony). Girls will do that, but the show exaggerates horribly. Perhaps the lesson to be taken away is to not be so eager to "ship"-up girls.
Another thing is he has relatively complete control of his sexuality (contrary to what the show likes to frame him as). This is the big contrast between him and Runkle. Runkle is deeply needy and led around by his cock. Hank is the opposite, almost anti-thirsty, which is why women fall into his lap.

Ultimately Californication is fiction and Hank Moody is an unrealistic Gary Stu in an environment perfectly suited to his style of game. But there are some good basic principles to emulate. What ultimately makes Hank the ladies' man that he is, is that he's utterly unfazed by female beauty and sexuality. Girls come at him with everything they've got and to him it's Tuesday. That's something that only comes with practice and experience.
