IMO grow a pair, you're on the right track, she called you; just keep doing what you're doing.

Fuck that guy, there are a million reasons why you're better, pivot the conversation away from him to the good time you'd show her when you take her out or whatever. Just KNOW she's attracted to you, you got her to call YOU, take that as an IOI. Also keep the text and phone calls short, the busier you are, the more she'll be interested. We do our best work in person.

Don't ever, ever, allow that to happen. Change the subject. Talk about her future not her past, preferably a future that involves you. If she persists after you have tried to change the subject, playfully call her out on it and tell her that you don't want to hear it. Then force the subject to change. In the rare case she persists after that or gives you shit like "aren't you my friend; can't I talk about my problems?" then break contact. Get back in touch in a couple of days as if nothing happened and follow the same steps as above. Change subject, call her out, disconnect.

You want her to associate positive, happy thought with you. You don't want her to think of you as "that guy she bitches about her ex to".
