Three options:

1) She probably met some real successful people, wherever she studied abroad, and compared you to them. Considering you were going to move with her while she went to Grad school shows you didn't have a life game-plan and where just tagging along. She probably compared you to the people she met, and behold, you weren't meeting up to her standards.

The reason she probably feels bad or guilty about leaving you is because she's emotionally attached to you, but logically she has to move on from you. It happens, it's always like that during a break up.

Your best bet is to accept in your head that this is a break-up, and allow yourself to emotionally feel it. This'll help you transition into singlehood much faster without dwelling too much on the sadness. And if you ever do get back together at least you didn't spend the time apart sad, sulking, and crying, more than you should have.

2) She banged someone else on the trip and feels guilty because she thought she'd never be "that type".

3) Anytime a girl says "she needs time apart" it means that she's been thinking about breaking up with you for some time and has been waiting for some miraculous moment of clarity to either fall in love with you, or have a moment of realization where she can clearly say she's not into you. In other words, girls need time apart when you're more trouble than you're worth.

Sorry if it sounds bad, but I wasn't trying to make it come off that way. It was just some of the options of an infinite number of things that could have happened. Do what's best for you, but if you're on this subreddit then you you should know how things work in real life.

I've been spending my time now trying to improve myself and figure out a future so the next time we're together I can prove to her that I'm worth it.

You already lost if you have to validate yourself to her.

My question is how do I demonstrate I'm worth it to her when we finally do see each other again?

Show that you can survive without her. Go on dates, have fun with friends, get good grades, get a job, get an internship, do all the stuff that would make you successful with or without her. Then you'll see what happens... most likely she'll either come back or you'll meet someone better. Either way, you'll be having fun in the meantime.
