Depends on the venue.

For the approach (first 30 sec/1 minute), the content doesn't matter (mostly). It's more about exhibiting your confidence and security in yourself, and just showing her that you're not crazy. Yeah, it's fabrication, but you don't walk up to a girl and ask her to go home with you. (Unless you've had jager and like the Apoc. opener).
For most anything beyond the approach, date, etc. You have found one method hidden in your question. Basically, connecting with a girl (or guy) on the banality and painful process of discussions/talking about the weather/etc. When done correctly, it comes off very meta when both of you agree to "fuck the rules." Example:

"I suppose this is the point of night where I ask for your phone number and we go to a mid-priced Italian restaurant. I talk about my uninteresting interest in stamps and you tell me about your cats. We bond over stamps with cats on them. I'd rather not go on, because it's entirely boring. Instead, I want to hear what you are REALLY interested in, right here and now. And it better be impressive and/or incredibly dorky that I can't stop laughing."

Some girls are down for the intellectual challenge to fuck the rules and some are like, wtf? But....I'm sorry to say that despite this technique you will still have to endure SOME boring conversation because the rules are there for a reason. Just as you will want to talk about something that will bore her endlessly. But, because you dig each other, you both deal with it, grow with it, and perhaps end up embracing it. I now like crochet (previously, ick)

Seriously, if you're bored when you're talking to women, there are two possibilities: 1. She's boring and you're talking to the wrong woman. 2. You're boring and you're talking the wrong way. If it's the first possibility, you're going to have to start talking to women that are actually interesting. Trust me, they're not all boring. If it's the second, you're going to have to learn to talk to people, not just women. Have you ever been in a conversation with someone (male or female) where it was clear that they were just humoring you and not really interested in what you had to say? Talk the way you'd want to be talked to: make jokes that you think are funny, ask questions, tease her a little, follow the threads you find most interesting. If you enjoy the conversation, then it's more than likely the other person will, too.

Also, don't get into a relationship (or have sex, for that matter) with a woman just because you're lonely and want a relationship. Get into a relationship with a woman because you find her worth being in a relationship with.
