You probably did fine, but if I were you I would invite her to some activity that facilitates escalation a bit more. You mentioned she loved the bowling, so why not try something kind of fun easy 'sport' like mini-golf or something. Maybe with a bit of competitiveness so that it amps up the feelings between you two.

Definitely, yeah, dinner dates are lame as far as excitement goes, even if the conversation is good. How would I escalate at a mini golf course, for example though? Just get her comfortable enough to come over to my place, then escalate to k / f close? Also, any ideas for gauging current interest levels? That last date definitely didn't move me any closer to attraction, only rapport, maybe a little comfort, and I don't want to waste time on a girl that's not interested anymore (but would probably like to keep her as a friend, so that confuses things..)

Dinner dates are lame if you don't drink. Some of the best dates I've had have been at dinner with a couple of bottles of wine in us.
I certainly wouldn't give up on her. If there's one thing I've learned, it's never burn bridges. It might not work out now but down the line it may, or she might have friends that you meet and get on with.
I'd leave the next date up to her. Ask her when she wants to go out again and ask her what she'd like to do. If you have bowling, do you have skating? Minigolf? things like that are good for getting to know eachother and as she seemed to enjoy that first one, she may like to do something similar until you build up a proper rapport.
Though, if you have your own place and you can cook. That's always a pretty good option (No takeaways yet).
