Women form an opinion of you whenever they get to know you.

They always tell me they don't want a relationship at this point and don't seem to be interested in men in general

Most of the time this is because you did not meet a standard or you just aren't worth dating.

But as soon as that girl sees me talking and flirting with other women she is suddenly interested in me.

This is because it is possible what they thought about you wasn't true. Some even reach out to see if it isn't true.

But I do get the feeling that if I do give her all my attention again she will just revert to not being interested and she just misses the attention

Well this is because when you do this you reinforce the first opinion. Most of the time it is not because of the attention. Other times it is.

Women are never 'hard to get' for people they are interested in.

So the issue is that you are not capturing their interest soon enough into the cycle.

They can also lose interest will lead more to a type of 'ghosting' rather than 'hard to get'

So you also have to hold their interest, it's really hard to gain someone's interest again after they've already lost it.

I'm more inclined to think it is social vetting.

I'm more inclined to talk with married men at length because we're both crystal clear on the platonic nature of our relationship. There's no pressure. Single dudes get this status if he's friends with women and he doesn't hit on all of them.

Girl probably thinks you're talking to other girls because you're going to be chill and not pursue her. When she talks to you again, you lose your cool and she's disinterested.

You ought to see the video from The Jeffy Show about the legendary "Chess Club." It used to be on Youtube but I couldn't find it. Search for it, it's hilarious. I remember reading the original FRs by jlaix, it was amazing seeing how it developed.
