Let me summarize your story:

You met a girl in school. She was always looking at u and curious about your classes.

On the final class day, you two talked for an hour but didn't exchange contact.

You two remained acquaintances. One day u needed help, she gave u her # and met up to help u, and kinda hung out with u.

You guys kept in touch, and she didn't respond ur text.

U randomly ran into her, and u guys grabbed a bite.

One day she needed ur help, u returned the favour.

U texted her and she won't hang out.

U randomly ran into her she wanted to talk, u walked away.

I'm sorry to say that I don't see any solid indication from her at any time that indicates she sees u as a potential boyfriend material. Most of the interactions u two had were class/program/school related and they meant nothing about being your girlfriend. And the time that u two hung out after she came to help u, she ghosted u after that. And the next time u two hung out after you came to help her, she ghosted again u after that.

May I ask the two times that u two hung out, was it like a date or was it like a gathering of two coworkers?

I'm not too sure of the details, but I'm assuming that both of u are single and u hung out 2 times and somehow u let her know that you want her to be your girlfriend, but both times, she ghosted u after. By looking at it, I'm sorry to say that I don't think you are what she is looking for in a boyfriend. But I think you should remain friends with her, because she is a good friend and u guys are taking the same classes and helping each others.
