It doesn't necessarily mean she's interested in you, I think it's more a sign of her being self-conscious about how she looks. Which could mean she's interested, or it could mean she's nervous around you. It's somewhat situational, if you asked her on a date alone, then it's probably because she's interested in you. If it's a different situation, like you're meeting for the first time at work, then it might just be nervousness. The best way to find out is when you're on a date, try some physical escalation. Are you saying she agreed to go out to dinner with you alone? If so then she's clearly interested on some level and you should assume she wants you to physically escalate.

How often do you play with your balls? I'm not saying you do at all, no particular reason to do so. If you do all day long, I also see nothing wrong with that, good on you. Neither means a whole lot. Same with playing with ones hair. It might as well be a simple habit
