Go in for your appointment, chat her up without proposing anything, have your appointment come out.

Then drop something like this on her.

"I've really enjoyed the conversations and I'd like to continue them over dinner sometime. But I don't want to step out, I know this is your job. So I'll ask this once, and if I get anything other than a yes, I'll pretend we never flirted. Do you want to get dinner? If so, give me your number so I can text you and set up a date."

Shoot your one shot. Set the condition that "yes" equals giving you her number so that you can continue contact outside of any form of professional contact methods like calling the office or showing up for an appointment.

If you do not get a number, write it off as fun flirting and go find someone else to flirt with.

You'd be amazed what you can get away with asking if you accept no gracefully the first time and make it clear in some way that you understand the usual boundaries and that this is your like one time to kinda test them with her. If you don't get a number, revert straight to like professional interaction and treat her like she's a really nice 80 year old woman behind the counter.
