Did you use the word date or relationship?
Because for some people dating means, you want to know her to see if there is a future for a relationship. And that doesn't mean you're exclusive yet.
But if you want to go back on what you said, just do it, there is probably not a right way to tell her that without sounding as a dick. How she will receive that news, is her and only her responsability.
