It depends on your dynamic. Usually it's best to just sit them down and say you don't want to have sex any more. Explain yourself as little as possible, or preferably not at all. If someone asks why you don't want to have sex with them there's really no answer that will make them feel better.

Depending on how much time you've been spending together and how much sex you're having and how it happens, you may be able to get away with "ghosting" the sex; just not having sex any more and avoiding the situations in which it would come up. But 90% chance you're better off being direct.
