Everything she has done to you, she has done to other guys as well, to signal availableness (passively, she was doing the same thing "nice guys" do, which in reality, works for both genders as long as they're attractive enough, but it's passive - you saw it for yourself - she ended with someone not good looking, it's not the best strategy for both genders).

Why do you always get in your own way? Offers to drive you and you say no. Offers to exchange numbers and you say no. It's possible that this may have confused her and pushed her to pursue more but either way none of that means anything if she ends up with another guy.

Learn to accept good things that come your way, and always assume you have a shot with someone especially ones that give you IOIs like that. Always assume interest in these cases because it's better to try and be wrong than to do nothing and wonder what if.

She was probably showing other guys interest also and one of them asked her out and became her BF in that past semester, assuming she wasn't dating the guy all semester.

If women show interest and you do not go for it then they assume one of the following: 1. he's not interested, 2. he has a GF, or 3. he's a too big a pussy to make a move.
