I'm lifting at home but would starting now with the poor diet I have hinder me in the future? I'm worried that since I'm not eating enough I could pass out from low blood sugar.

Your shit diet is going to hinder you regardless, however you might be able to pull some beginner gains out of your ass even with a piss poor diet, assuming you've never lifted before.
Using dumbbells is a waste of time if you're trying to add 30 pounds of lean mass, which by the way takes much longer than you'd think and only happens in a caloric surplus.
You need to get a gym membership tommorow and go 3-4 days a week. Find a beginner program from the fitness sub or if you're really unsure and nervous, just spent a few weeks learning the ropes at your gym and fucking around in order to feel more comfortable (DO NOT do this very long though). Once you start lifting then you can worry about fixing your shit diet. I'd recommend buying a Fitbit and a food scale. The Fitbit will help you track calories and is a great motivating tool and the food scale will help you measure out the food you're eating to get an accurate assessment of how many calories you're eating. Find your TDEE and make sure you eat over it. Drink the calories in a shake if you have to, but not getting enough calories will stop your progress dead in its tracks sooner than later.
Yeah 30 pounds of lean mass will take a while, but I'm not here for instant gratification. I've got a couple of friends that are frequent gym goer's so I can have them show me the ropes. I've got an apple watch currently but would a fitbit be a better option?

I'd be very wary of your friends advice. If your friends are anything like mine, they don't know shit about lifting or what it takes to gain lean mass.
Idk if an Apple Watch can track calories. If it can then use that, if not get a Fitbit. But lookout when you use these devices. The number of calories burned that it tells you are going to be pretty inaccurate. What you should do is calculate your TDEE, add 500 calories to it and aim for that (you can do 200-300 if you're afraid of getting fat) to be your daily calorie intake. Disregard the burned calories number on your Fitbit/Apple Watch, and simply add more calories if the watch said you worked out harder than usual (ex: I usually have ~50 active minutes a day and 6000 steps. If I end up with 70+ active minutes or 8000+ steps, I'll eat 50-100 calories more than usual in order to make sure I'm at the correct surplus). Track your weight every day to make sure you're gaining consistently. If you aren't then you have to add more calories. If you're gaining too fast then lower them.

personally I'd recommend perfecting form vs making progress and gaining mass... that way you set the foundation for great gains when you fix your diet.
also, lpt: peanut butter has 100 calories and 4g protein per tablespoon.

Start lifting consistently immediately. Listen to your body and you won't pass out. Work on and research how to better feed yourself and lifting programs but don't think that everything has to be perfect to begin. This is a big hangup for people and what fucked me up in the beginning. This stuff takes time which is why you need to start now and get better over time
