Your best bet would actually be a good Sony voice-activated recorder. She's not going to incriminate herself in your presence but if you put a VAR in whatever area of the house that she typically uses while speaking on the phone, you can probably get something. Just make certain about recording laws where you are.

Cameras with microphones are extremely small, cheap, and easy to hide now-a-days. They can even record for days with expandable memory and the right settings. Voice activated audio recorders are a good option. Body cams. Security cameras with automatic cloud backup. Don't let her know the pin or password to access security footage.
